Chambers Ruby Port Stars in the perfect red wine sauce

When award winning Chef Gary Mehigan spoke about using a ruby port in the dish he was preparing in Episode 29 of MasterChef Australia, it wasn’t unreasonable to wonder if it was going to be a Rutherglen wine.
After describing the rich, sweet red wine flavour he was looking for to accompany the rib eye steak he and George Calombaris were preparing, he emphasised the importance of using good ingredients. “If it doesn’t taste good at this stage, it won’t taste good at the end” he stated before recommending adding a dash of the wine you plan to serve with the meal, during the final stage of making a sauce.
It was when Gary poured the port into the pan to deglaze the stock that we saw the very distinctive label of the Chambers Rosewood Ruby Port. George got a good laugh when he described the perfect red wine sauce as having “fantastic balance - silky smooth – like a pair of velvet knickers,” he commented.
